The GlenAllachie 16 Year Old Present Edition celebrates Billy Walker’s 50th anniversary and showcases his innovative approach to whisky production. Released in 2022 at 48% ABV, this rare single malt represents Walker’s current work. Where he applies his expertise in cask management. He sources unusual casks, and this edition features Mizunara oak, a rare and expensive Japanese wood seldom used for whisky maturation. Mizunara oak presents challenges because it tends to leak and twist during growth. Basically, the trees must grow for 200 years before being felled, which is twice as long as most oaks used for casks.
The whisky undergoes a complex two-step maturation process, first in Sherry casks and then in Mizunara oak casks. The result is a whisky with a unique and refined flavor profile. GlenAllachie bottled only 2,600 bottles, making it a limited edition and a collector’s item.
Tasting Notes
Firstly, the whisky’s color is an intense chestnut, hinting at the rich flavors inside. Secondly, on the nose, it bursts with dark chocolate, heather honey, and grilled almonds. You also detect subtle notes of sandalwood, ginger, orange zest, caramelized pecans, and coconut shavings. Then, the complexity continues on the palate, where waves of heather honey, cinnamon, and crystallized ginger greet the taste buds. These flavors give way to demerara sugar, dried dark berries, hazelnuts, and fig syrup, creating a full-bodied and indulgent experience.
